Dodatki E, dodatki do żywności, konserwanty

Wymagania dla produkcji dodatków spożywczych

 

 

  • Dodatki do żywności są substancjami, które w normalnych warunkach nie są spożywane same jako żywność, ale dodawane są do żywności celowo, ze względów technologicznych, takich jak konserwowanie żywności, emulgowanie faz, czy też nadaniem barwy.
  • Dodatek do żywności oznacza każdą substancję, która w normalnych warunkach ani nie jest spożywana sama jako żywność, ani nie jest stosowana jako charakterystyczny składnik żywności, bez względu na swoją ewentualną wartość odżywczą, której celowe dodanie, ze względów technologicznych, do żywności w trakcie jej produkcji, przetwarzania, przygotowywania, obróbki, pakowania, przewozu lub przechowywania powoduje, lub można spodziewać się zasadnie, że powoduje, iż substancja ta lub jej produkty pochodne stają się bezpośrednio lub pośrednio składnikiem tej żywności

Wymagania dla dodatków określa rozporządzenie Parlamentu Europejskiego i Rady (WE) nr 1333/2008 z dnia 16 grudnia 2008 r. w sprawie dodatków do żywności.

Rodzaje funkcji pełnionej przez dodatki do żywności w środkach spożywczych oraz dodatki do żywności w dodatkach do żywności i w enzymach spożywczych:
1) „substancje słodzące” to substancje stosowane do nadania środkom spożywczym słodkiego smaku lub stosowane w słodzikach stołowych;

2) „barwniki” to substancje nadające lub przywracające żywności barwę, obejmujące naturalne składniki żywności i naturalne źródła, które w normalnych warunkach ani nie są same spożywane jako żywność ani nie są stosowane jako typowe składniki żywności. W rozumieniu niniejszego rozporządzenia barwnikami są preparaty uzyskane ze środków spożywczych i innych jadalnych surowców naturalnych uzyskanych poprzez fizyczną lub chemiczną ekstrakcję, której efektem jest selektywna ekstrakcja pigmentów względem składników odżywczych lub aromatycznych;

3) „substancje konserwujące” to substancje przedłużające okres przydatności środków spożywczych do spożycia poprzez ochronę przed zepsuciem spowodowanym obecnością mikroorganizmów lub chroniące przed wzrostem mikroorganizmów patogennych;

4) „przeciwutleniacze” to substancje przedłużające okres przydatności środków spożywczych do spożycia poprzez ochronę przed zepsuciem na skutek utleniania, takim jak jełczenie tłuszczu czy zmiana barwy;

5) „nośniki” to substancje stosowane do rozpuszczania, rozcieńczania, dyspersji lub innej fizycznej modyfikacji dodatku do żywności, środka aromatyzującego, enzymu spożywczego, składnika odżywczego lub innej substancji dodanej do środka spożywczego w celach odżywczych lub mających związek z fizjologią, które nie zmieniają ich funkcji technologicznej (i same nie wywołują żadnych skutków technologicznych), w celu ułatwienia posługiwania się nimi lub wykorzystania czy zastosowania ich;

6) „kwasy” to substancje, które zwiększają kwasowość środka spożywczego lub nadają mu kwaśny smak;

7) „regulatory kwasowości” to substancje zmieniające lub kontrolujące kwasowość lub zasadowość środka spożywczego;

8) „substancje przeciwzbrylające” to substancje ograniczające tendencję pojedynczych cząstek środka spożywczego do zlepiania się;

9) „substancje przeciwpieniące” to substancje zapobiegające lub ograniczające powstawanie piany;

10) „substancje wypełniające” to substancje zwiększające objętość środka spożywczego nie zwiększając znacząco jego wartości energetycznej;

11) „emulgatory” to substancje umożliwiające utworzenie lub utrzymanie jednorodnej mieszaniny dwóch lub większej liczby niemieszających się faz, takich jak olej i woda w środkach spożywczych;

12) „sole emulgujące” to substancje które zmieniają białka zawarte w serze w formę zdyspergowaną wprowadzając w ten sposób jednorodne rozłożenie tłuszczów i innych składników;

13) „substancje wiążące” to substancje powodujące lub utrzymujące jędrność lub kruchość tkanek owoców i warzyw lub współdziałające z substancjami żelującymi w tworzeniu lub wzmacnianiu żelu;

14) „wzmacniacze smaku” to substancje wzmacniające istniejący smak lub zapach środków spożywczych;

15) „substancje pianotwórcze” to substancje umożliwiające powstanie jednorodnej dyspersji fazy gazowej w środkach spożywczych w płynie lub w postaci stałej;

16) „substancje żelujące” to substancje nadające środkom spożywczym konsystencję poprzez tworzenie żelu;

17) „substancje glazurujące” (w tym środki do smarowania) to substancje, które po nałożeniu na zewnętrzną powierzchnię środka spożywczego tworzą warstwę ochroną lub nadają jej błyszczący wygląd;

18) „substancje utrzymujące wilgoć” to substancje zapobiegające wysychaniu żywności poprzez przeciwdziałanie wpływom atmosferycznym, posiadające niski stopień wilgotności, lub ułatwiające rozpuszczanie się proszku w środowisku wodnym;

19) „skrobie modyfikowane” to substancje otrzymane w wyniku jednego lub większej ilości zabiegów chemicznych na skrobiach spożywczych, które mogły być wcześniej podane zabiegom fizycznym lub działaniu enzymów, i mogą być rozcieńczone lub odbarwione kwasem lub ługiem;

20) „gazy do pakowania” oznacza gazy inne niż powietrze, wprowadzane do pojemnika przed, w trakcie lub po umieszeniu środka spożywczego w tym pojemniku;

21) „gazy nośne” oznacza gazy inne niż powietrze, które wypychają środek spożywczy z pojemnika;

22) „substancje spulchniające” to substancje lub mieszaniny substancji uwalniające gaz, a tym samym zwiększające objętość ciasta;

23) „sekwestranty” to substancje tworzące związki chemiczne z jonami metali;

24) „stabilizatory” to substancje umożliwiające utrzymanie właściwości fizyczno-chemicznych środków spożywczych; stabilizatory obejmują substancje umożliwiające utrzymanie w środkach spożywczych jednorodnej dyspersji dwóch lub większej liczby wzajemnie nierozpuszczalnych substancji, substancje stabilizujące, zachowujące lub wzmacniające istniejącą barwę środków spożywczych i substancje zwiększające zdolność środków spożywczych do wiązania, w tym do tworzenia wiązań poprzecznych pomiędzy białkami, umożliwiających wiązanie się elementów środków spożywczych, a tym samym uzyskiwanie produktów zrekonstytuowanych;

25) „substancje zagęszczające” to substancje zwiększające lepkość środków spożywczych;

26) „środki do przetwarzania mąki (polepszacze)” to substancje, inne niż emulgatory, dodawane do mąki lub ciasta w celu poprawy ich właściwości wypiekowych.

Kategorie dodatków Spożywczych

Za dodatki do żywności nie uważa się jednak:

a) monosacharydów, disacharydów lub oligosacharydów oraz środków spożywczych zawierających te substancje, zastosowanych ze względu na swoje właściwości słodzące;

b) środków spożywczych, zarówno suszonych, jak i w formie skoncentrowanej, w tym środków aromatyzujących dodanych w trakcie produkcji wieloskładnikowych środków spożywczych, ze względu na ich właściwości aromatyczne, smakowe lub odżywcze wraz z wtórnym efektem barwiącym;

c) substancji stosowanych w materiałach pokrywających lub powlekających, które nie stanowią elementu środków spożywczych i nie są przeznaczone do spożycia wraz z tymi środkami spożywczymi;

d) produktów zawierających pektynę i pochodzących z wysuszonych wytłoków z jabłek lub wysuszonych skórek owoców cytrusowych lub pigwy albo ich mieszaniny, otrzymywanych poprzez działanie rozcieńczonym kwasem, po którym następuje częściowa neutralizacja solami sodowymi lub potasowymi („pektyna płynna”);

e) baz gumy do żucia;

f) dekstryn białej lub żółtej, skrobi prażonej lub dekstrynowanej, skrobi modyfikowanej działaniem kwasów lub zasad, skrobi bielonej, skrobi modyfikowanej fizycznie i skrobi poddanej działaniu enzymów amylolitycznych;

g) chlorku amonu;

h) osocza krwi, żelatyny spożywczej, hydrolizatów białkowych i ich soli, białka mleka i glutenu;

i) pozbawionych funkcji technologicznej: aminokwasów i ich soli, innych niż kwas glutaminowy, glicyna, cysteina i cystyna oraz ich sole;

j) kazeinianów i kazeiny;

k) inuliny;
